Artichoke Dip

Recipes & Traditions

By Deborah Johansen

1 Can of Artichoke Hearts (15 ˝ oz)
1 Cup Mayonnaise
1 Cup of Grated Parmesan Cheese (hard not powdered)
1/8 teaspoon garlic powder
8 oz. Grated Mozzarella Cheese

Shred the artichoke hearts with a fork (preferred) or chop in a food processor.  Mix the remaining ingredients in a bowl and add the shredded artichoke hearts.  Mix thoroughly.  Pour mixture into a glass baking dish and bake at 350 degrees for 25 minutes.  If the top is not browned, bake an additional 5-10 minutes longer or until it browns.  Use the broiler to hasten the browning if necessary. Serve hot with crackers.  Some like Big Wheat Thins, some like Triscuits, and some like no crackers – just a big spoon!

This artichoke dip is always a big hit at parties and gatherings so you might want to double the recipe!
