¾ cup sugar     1 ½ cup flour
½ cup shortening    1 level tsp baking soda
1 egg      pinch of salt
3 bananas (mashed with fork)  ¼ cup nuts (optional)


Cream the shortening and then add the sugar, unbeaten egg and mix together.   Add mashed bananas (if using large bananas, 2 ½ are enough). Sift together the flour, baking soda and salt and add to the mixture.  Stir in the nuts (if using) and pour into a bread pan.   Bake at 350˚ for 1 hour.  (You’ll know it’s done when you stick a toothpick into the loaf and it comes out dry.) Yum! Yum!
