One of my favorite holiday memories is making home made mince meat with Gram, Mom and the rest of the family. As a child, peeling the apples was the very best part. If you were skillful or lucky enough to peel a whole apple in one continuous, unbroken “peel”, you got to throw it over your shoulder. When the peel lands on the floor, it takes the shape of a letter of the alphabet (well, most times anyway).

This artichoke dip is always a big hit at parties and gatherings so you might want to double the recipe! 
Serve hot with crackers. Some like Big Wheat Thins, some like Triscuits, and some like no crackers – just a big spoon!

4 Squares of baking chocolate 2 Cups of sugar
½ Cup of butter 1 Cup of flour
4 Eggs 1 Teaspoon of vanilla
Melt chocolate with butter over hot water (double boiler). In a separate bowl, beat eggs and sugar. Blend melted chocolate mixture into beaten eggs and sugar, and then stir in flour. Add the vanilla last. Bake at 325˚ for 40 minutes. Enjoy!

¾ cup sugar 1 ½ cup flour
½ cup shortening 1 level tsp baking soda
1 egg pinch of salt
3 bananas (mashed with fork) ¼ cup nuts (optional)
Cream the shortening and then add the sugar, unbeaten egg and mix together. Add mashed bananas (if using large bananas, 2 ½ are enough). Sift together the flour, baking soda and salt and add to the mixture. Stir in the nuts (if using) and pour into a bread pan. Bake at 350˚ for 1 hour. (You’ll know it’s done when you stick a toothpick into the loaf and it comes out dry.) Yum! Yum!

As you all know, getting to New Zealand isn’t exactly a quick trip!
After a long international flight, we arrived safe and sound in the la
nd of the Kiwis.
Once in Auckland, our adventure began in earnest. Driving on the left while semi-awake in the pre-dawn darkness in a light rain and without proper directions is not for the faint of heart!
